Instant Pot Ezo Gelin Soup

A traditional Turkish red lentil soup made quickly and easily in the instant pot. This version is adapted from the webstie, Ozlem's Turkish Table, for the Instant Pot. —Desert Cooking

What You'll Need
Ingredients
  • 1 Onion, chopped
  • `1 tablespoons Olive Oil
  • 1 cup Red Lentils
  • 1 tablespoon Rice
  • 2 tablespoons Bulgur
  • 4 tablespoons High Quality Tomato Paste
  • 2 tablespoons Butter or Olive Oil if vegan
  • Red pepper flakes to taste
  • 1-2 Lemons cut into wedges
  • 1 tablespoon Dried mint
  • 1 tablespoon Red pepper paste or 1 teaspoon red pepper flakes
Directions
  1. Using the "Sauté Mode" cook the onions in olive oil until translucent.
  2. Add the red lentils, bulgur, rice and 6 cups of (preferably hot) water.
  3. Press "Off" then press "Manual" and set for 7 minutes of high pressure.
  4. After 7 minutes, release the steam (you can also wait for natural release if you prefer).
  5. Add the tomato paste, red pepper paste, dried mint, and butter. Stir until well mixed and the soup has thickened (5-7 minutes).
  6. Serve the soup with lemon wedges.

Lovely recipe! The combination of flavors is so comforting. You can increase the amount of rice or bulgur wheat if you want a thicker soup. Thanks for posting!

The red pepper paste that is mentioned in the instructions is not in the list of ingredients.

Thanks. I love this recipe! The mint and the lemon really make it delicious. I substitute rice for the bulgur to make it gluten-free.
