Author Notes: This is the perfect salad for fall/winter entertaining. It only has 5 ingredients and will make any spread look vibrant!

Serves: 2-4

  • 2 Fuyu persimmons, sliced into thin rounds or wedges
  • 4 ounces feta
  • 1 ounce cream cheese
  • 1 teaspoon fresh tarragon
  • 1/4 cup pomegranate seeds
  1. Combine feta and cream cheese in a food processor and blend until creamy.
  2. Spread whipped feta on a plate and layer with sliced persimmon.
  3. Garnish with tarragon and pomegranate seeds.
