Sweet Potato Smoothie

Most smoothies are made with a lot of fruit, and although that makes them taste delicious, it can also make them high in sugar. This smoothie is low in sugar because it doesn’t contain any fruit—just sweet potato and a little drizzle of maple syrup. The sweet potato helps start your day with healthy carbohydrates and other antioxidants, and almond butter and chia seeds are added for protein. If you want your smoothie to be a little sweeter, just increase the amount of maple syrup by 1⁄2 teaspoon and feed your sweet tooth.

Ingredients
  • 1 medium sweet potato, peeled
  • 2 tablespoons raw creamy almond butter
  • 1 tablespoon chia seeds
  • 1 cup unsweetened almond milk
  • 1/2 teaspoon pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 5 ice cubes
Directions
  1. Cook sweet potato by poking holes in it with a fork and microwaving 4–5 minutes or until soft. Let cool for a few minutes.
  2. Add sweet potato along with all other ingredients to a blender and blend on high speed until smooth, about 10–20 seconds. Serve immediately.

Yummy (without the sugar spike of most smoothies)! I add 1/2 frozen banana and use a bit more maple syrup- tastes like pumpkin pie
