Banana Flax Bread

Health-conscious banana bread with flax and chia seeds —Christine

What You'll Need
Ingredients
  • 3 bananas, mashed
  • 1 3/4 cups Whole wheat pastry flour
  • 2 eggs
  • 1 cup sugar
  • 1/4 cup olive oil or canola oil
  • 1/4 cup applesauce
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 tablespoons flax seeds ground
  • 1 tablespoon chia seeds
  • 1/2 cup chopped walnuts (if desired)
Directions
  1. Whisk eggs in large bowl, add bananas, sugar, vanilla, oil, applesauce. Combine well. Then add flour, baking soda, baking pwder, flax and chia seeds. Mix together for 2 minutes. Add 1/2 cup chopped walnuts if desired.
  2. Put into greased 9 x 5 inch loaf pan. Cook for 1 hr/10 minutes in 325 degree oven. Take out and let cool, remove from pan and enjoy.
