This recipe is over 30 yrs old. I believe it came from a cookbook collection as a charity fund raiser. This banana cake/bread gets rave reviews, great with coffee, or frozen for later. I have change the recipe to make 3 small loaves. Probably makes 10 or 12 slices/loaf. I have served for the original book, but I guess with the Navy moves from Virginia, to California, back to Virginia, and now in Kansas for 20 yrs, it may be somewhere lost in transit?? —linda

What You'll Need
Ingredients
  • 1/2 cup Butter
  • 1 1/2 cups Surgar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup Soured milk
  • 1 cup mashed bananas, 2 large
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts
  • 1 packet small bag of mini chocolate chips
  • 2 cups flour
Directions
  1. Preheat oven to 350degrees. To sour milk: Add 1/2tsp Vinegar or lemon juice to 1/4 milk. Stir and let the particles separate. Mash bananas: Mash bananas with a fork. and splash with brandy, about a TBL.
  2. Combine flour, baking powder and baking soda. Cream butter and sugar; then add eggs. Alternately add flour mixture and sour milk to the creamed mixture. Add bananas, vanilla, nuts and then chocolate bits. .
  3. Pour into prepared pans. (Baker's Joy) I use small loaf pans. 7 1/2 X3 3/4X 2 1/4 inches. Bake for approximately 1 hr. Original recipe called for two loaf pans. (9X5") .
