Banana Cheesecake Pudding

Craving cheesecake but don't want to go through all the trouble? This pudding has all those flavors but spares you the time consuming process that a cheesecake takes. —inpatskitchen

What You'll Need
Ingredients
  • 8 ounces whipping cream
  • 1/4 teaspoon unflavored gelatin granules
  • 4 ounces cream cheese
  • 8 ounces mascarpone cheese
  • 1/2 cup granulated sugar
  • 2 very ripe medium bananas, mashed until very smooth
  • 2 teaspoons pure vanilla extract
  • 8 ounces sour cream
  • Chopped toasted nuts of your choice (optional) ( I like macadamia )
Directions
  1. Place the whipping cream in a medium bowl and sprinkle the gelatin over. Whip the cream until stiff peaks form. Set aside in the fridge while you continue.
  2. In a medium bowl cream the cream cheese, mascarpone and sugar until very creamy. Stir in the mashed bananas, sour cream and vanilla until fully incorporated.
  3. Fold in the whipped cream and refrigerate for a few hours. Serve in small bowls garnished with nuts if desired.
