Tuscan Pasta Salad

Author Notes: A flavorful pasta salad with bowtie pasta, Kalamata olives, artichokes, sundried tomatoes, and topped with a balsamic dressing, and freshly grated Parmesan cheese. Perfect for summer BBQ's, picnics, and pot lucks.Dash of Amy

Ingredients

Pasta Salad

  • 16 ounces bowtie pasta
  • 1 cup kalamata olives, halved
  • 1/2 cup oil packed sundried tomatoes, chopped
  • 14 ounces can artichoke hearts, chopped
  • 1/2 cup pine nuts
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 12 fresh basil leaves, chopped
  • 1/4 cup freshly grated Parmesan cheese
  • 2-3 tablespoons balsamic glaze

Balsamic Dressing

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic

Directions

Pasta Salad

  1. Cook the pasta according to package directions; strain it and place in a large mixing bowl.
  2. Add the remaining ingredients except the Parmesan cheese, and balsamic glaze.

Balsamic Dressing

  1. Whisk ingredients together until blended and thickened.
  2. Pour over the pasta salad, and then drizzle the top with balsamic glaze.
  3. Sprinkle fresh Parmesan cheese over the top.
