I had trouble tracking down nduja, so I developed this easy-as-heck workaround. It is a best friend to ricotta-smeared toast and hot spaghetti. If you can't find soppressata, any salami will do—just increase the Calabrian chiles to taste. —Emma Laperruque

What You'll Need
Ingredients
  • 1 cup finely diced soppressata (127 grams)
  • 3 tablespoons extra-virgin olive oil (42 grams)
  • 2 tablespoons crushed/minced Calabrian chiles (36 grams)
  • 2 tablespoons minced sun-dried tomatoes (36 grams)
Directions
  1. Combine all ingredients in food processor. Pulse until mostly smooth, scraping down as needed. The final coarseness is totally up to you! Store in the fridge and bring up to room temperature before serving.

I will never buy ‘nduja again. This tastes great, and I’d like to suggest a hack: I had a tub of Korean fermented red pepper paste and dipped into that in lieu of Calabrian peppers.

Scoville rating is 25,000-40,000. Find a chilli that falls into the range if you cannot find Calabrians.

Bought on Amazon.packed in vinegar, drained and repacked in olive oil ,garlic
Fresh basil,oregano and parsley.
Used vinegar in salad dressings

I was visiting in the Chicago suburbs over Easter and checked three supermarkets for nduja without success. I really expected to find it at Caputo's but they didn't have it either. Thanks for the DIY version!
