Ingredients

1/2 cup
whole unsalted pistachios + 1/4 cup more, chopped in small pieces, for topping

1 1/3 cups
plain thick yogurt

2 tablespoons
maple syrup

1/4 cup
tahini
-
Pinch
kosher salt

strawberries to serve
Directions

Optional, but highly recommended. Heat the oven to 350°F. Roast the pistachios on a baking sheet for 5-8 minutes, until golden and fragrant. Let cool completely.

Combine the pistachios, yogurt, maple syrup, tahini and salt in a blender. Blend until smooth, scraping the sides as needed. Serve with strawberries, cut into bite size pieces, and the chopped pistachios.
