  • Makes 3-4 servings
Ingredients
  • 1/2 cup whole unsalted pistachios + 1/4 cup more, chopped in small pieces, for topping

  • 1 1/3 cups plain thick yogurt
  • 2 tablespoons maple syrup
  • 1/4 cup tahini
  • Pinch kosher salt
  • strawberries to serve

Directions
  1. Optional, but highly recommended. Heat the oven to 350°F. Roast the pistachios on a baking sheet for 5-8 minutes, until golden and fragrant. Let cool completely.
  2. Combine the pistachios, yogurt, maple syrup, tahini and salt in a blender. Blend until smooth, scraping the sides as needed. Serve with strawberries, cut into bite size pieces, and the chopped pistachios.
