Buffalo Chicken Sandwiches & Ranch

Tender chicken breasts soaked in Frank's red hot sauce and spices, served on rolls with a tasty homemade Ranch dressing. —Dash of Amy

  • Cook time 10 minutes
  • Serves 4-6
Ingredients
  • Buffalo Chicken
  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 garlic cloves, minced
  • 1/2 cup Frank's red hot sauce
  • 2 tablespoons butter
  • 4-6 Rolls (or sandwich bread)
  • 1 tomato, sliced
  • 1 bunch green onions, finely chopped
  • Romaine lettuce
  • Ranch Dressing
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup buttermilk
  • 1/2 lemon, juiced
  • 1 garlic clove, minced
  • 1 teaspoon Mrs. Dash onion & herb
  • 1 teaspoon garlic powder
  • 1 teaspoon basil
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt

Directions
  1. Buffalo Chicken
  2. Heat a skillet over medium heat, and add olive oil and chicken.
  3. Sprinkle the chicken with spices and minced garlic.
  4. Cook for about 4 minutes on each side, or until chicken is done.
  5. Add butter and Frank's to the pan and cook until butter is melted and sauce is bubbling. Transfer to a covered dish.
  1. Ranch Dressing
  2. Combine all ingredients in a small bowl and mix well.
  3. To assemble sandwiches, spread ranch on one side of the bread and top with green onions, then chicken, tomatoes, and lettuce.
