Lamb Burgers with Goat Cheese Spread

We love grilled lamb, so this is a summer staple for us! These burgers are very reminiscent of kofta, because of the spices. They also have a secret ingredient to keep them juicy! —Cooks and Kid

Ingredients
  • Goat Cheese Spread
  • 4 ounces goat cheese, room temperature
  • 1/4 cup sour cream
  • juice of a 1/2 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Lamb Burgers
  • 1 pound ground lamb
  • 8 ounces crimini mushrooms, cleaned, stems removed and finely chopped in a food processor
  • 1 small onion, grated
  • 1/2 cup chopped parsley
  • 2 cloves of garlic, minced
  • 1/2 tablespoon ground coriander
  • 3 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 medium red chile, finely chopped (alternatively 1/4 teaspoon cayenne pepper)
  • 6 hamburger buns (preferably brioche)
  • arugula for serving
Directions
  1. In a food processor, combine goat cheese, sour cream, lemon juice, salt, pepper, and olive oil. Process until smooth. Place in a small container with a lid and refrigerate until ready to use.
  2. In a large bowl combine lamb, chopped mushrooms, onions, parsley, garlic, salt, pepper spices, and chopped chile (or cayenne). With a fork, rake all the ingredients together until well combined. This method keeps the burgers from becoming to dense.
  3. Heat the grill over medium-high heat.
  4. Oil the grates and then place the burgers on the grill and cook for 6-8 minutes on each side.
  5. Toast the buns a couple minutes on the grill.
  6. Place a burger on the bottom of the brioche bun, then top with the goat cheese spread and some arugula, top with the bun and serve!
