Grilled Banana Bread French Toast

This gluten-free dairy-free grilled french toast is made with healthy banana bread and tastes perfect served with grilled pears and honey. This is an excellent summer breakfast or dessert, and the grilled bread and pears in cinnamon lends a wonderful smell and mild sweetness. —maiah03

What You'll Need
Ingredients
  • Banana Bread
  • 1-1/2 cups bananas, mashed (about 3)
  • 3/4 teaspoon vanilla extract
  • 1 egg or 1 chia "egg"
  • 3 tablespoons coconut oil, melted
  • 3 tablespoons honey or maple syrup
  • 1/3 cup coconut sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 3/4 cup coconut or almond milk
  • 1-1/4 cups gluten-free oats
  • 1-1/4 cups all-purpose gluten-free flour
  • 1 cup almond flour
  • Frech Toast Egg Mixture
  • 3 eggs
  • 1/3 cup coconut or almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • coconut oil, for griling
Directions
  1. Banana Bread
  2. Preheat oven to 350F.
  3. Line a loaf pan with parchment paper; set aside.
  4. Mash bananas and whisk all wet ingredients together.
  5. Whisk dry ingredients into wet, stirring just until combined.
  6. Pour into loaf pan and bake for 1 hour or until top golden and cracked and an inserted toothpick comes out mostly clean.
  7. Let cool on an iron rack fully before slicing into 9 to 12 slices.
  1. Frech Toast Egg Mixture
  2. Light your grill or preheat grill pan.
  3. In a shallow bowl or dish, whisk all ingredients together. Dip cooled banana bread slices into the mixture, coating well.
  4. Oil grates or pan with coconut oil, and cook until grill marks form, about 2 min, and flip and repeat on other side for 2 min. Slice and grill pears if desired.
  5. Serve Banana Bread French Toast with optional grilled pears and honey.
