Author Notes: A crunchy exterior surrounds a flaky interior. Oh my. Plus, with the addition of almond meal, this breakfast won’t leave you hanging. Bring on the powdered sugar. —Ann Marie
Prep time: 8 hrs
Cook time: 12 min
cup oat flour plus 1 tbs
cup GF flour
cup almond meal
- Dissolve yeast in 1/2 cup warm water. Add warmed melted butter and milk. Add salt. Gently mix in oat flour and GF flour. Set on the counter overnight.
- After proofing overnight, gently mix in the almond meal. The batter is ready.
- Note: The batter should be on the thinner side and pour easily, which will give room for the batter to expand to a light, flaky texture while cooking in the cosy waffle griddle.
