GF Oat-Almond Waffles (Yeasted Overnight)

A crunchy exterior surrounds a flaky interior. Oh my. Plus, with the addition of almond meal, this breakfast won’t leave you hanging. Bring on the powdered sugar. —Ann Marie

  • Prep time 8 hours
  • Cook time 12 minutes
  • Serves 2
Ingredients
  • 1/2 cup oat flour plus 1 tbs
  • 1/4 cup GF flour
  • 1/2 cup almond meal
  • 1 cup milk
  • 2 tablespoons butter
  • 1 pinch salt

Directions
  1. Dissolve yeast in 1/2 cup warm water. Add warmed melted butter and milk. Add salt. Gently mix in oat flour and GF flour. Set on the counter overnight.
  2. After proofing overnight, gently mix in the almond meal. The batter is ready.
  3. Note: The batter should be on the thinner side and pour easily, which will give room for the batter to expand to a light, flaky texture while cooking in the cosy waffle griddle.
