Cheesy Bruschetta Chicken

Slices of mozzarella cheese are melted on top of perfectly seasoned, tender chicken breasts, and then topped with homemade tomato bruschetta. —Dash of Amy

What You'll Need
Ingredients
  • Chicken Breasts
  • 6 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Mrs. Dash chicken seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 8 ounces whole milk mozzarella cheese block, sliced
  • Bruschetta
  • 4 small tomatoes, finely chopped
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 basil leaves, finely chopped
Directions
  1. Chicken Breasts
  2. Heat a large skillet over medium heat, and add olive oil and chicken.
  3. Sprinkle half of the spices over the chicken evenly, and cook for about 4 minutes.
  4. Flip the chicken over once it's golden and add the other half of the seasonings.
  5. Cook until the chicken is cooked through, then transfer to a baking dish.
  6. Place sliced cheese generously over each piece of chicken.
  7. Bake at 375* for 5 minutes, then broil for an additional 3 minutes to melt the cheese.
  8. Place chicken on a plate and spoon the bruschetta over the top. **Drizzle balsamic glaze over the top for a nice finishing touch.**

  2. Place all the ingredients in a medium mixing bowl, stir well, and set aside, or store in the refrigerator until chicken is done.
