Ingredients
  • Carrot Muffins
  • 1 stick organic butter
  • 1/2 cup organic cane sugar
  • 1/2 cup organic brown sugar
  • 1 organic egg
  • 1 teaspoon vanilla extract
  • 3 organic finely shredded carrots
  • 1 1/2 cups organic flour
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • Cream Cheese Frosting
  • 8 ounces cream cheese
  • 2 tablespoons soft organic butter
  • 2 cups organic powdered sugar
  • 1 teaspoon vanilla extract
Directions
  1. Carrot Muffins
  2. Place butter, sugars, egg and vanilla in stand mixer and mix until creamy.
  3. Add remaining muffin ingredients and mix until ingredients are well blended.
  4. Line muffin tin with papers. Place a heaping spoonful of batter into each muffin tin.
  5. Bake at 350* for 30 minutes.
  1. Cream Cheese Frosting
  2. Place all frosting ingredients in a stand mixer and blend until creamy.
  3. Frost each muffin generously.
