- Carrot Muffins

1/2 cup
organic cane sugar

1/2 cup
organic brown sugar

organic egg

1 teaspoon
vanilla extract

organic finely shredded carrots

1 1/2 cups
organic flour

1/2 cup
chopped walnuts

1/2 teaspoon
baking soda

1/4 teaspoon
baking powder

1/2 teaspoon
salt

2 teaspoons
cinnamon
- Cream Cheese Frosting

8 ounces
cream cheese
-
2 tablespoons
soft organic butter
-
2 cups
organic powdered sugar

1 teaspoon
vanilla extract
Directions
- Carrot Muffins

Place butter, sugars, egg and vanilla in stand mixer and mix until creamy.

Add remaining muffin ingredients and mix until ingredients are well blended.

Line muffin tin with papers.
Place a heaping spoonful of batter into each muffin tin.

Bake at 350* for 30 minutes.
- Cream Cheese Frosting

Place all frosting ingredients in a stand mixer and blend until creamy.

Frost each muffin generously.
