Half-time Pork Loin Roast

This is such a simple and basic recipe that everyone will think you spent all day working on. You prepare the dish before the game begins and then let it cook through the first half of the game and have a meal for the second half! —Stan Griffin

What You'll Need
Ingredients
  • 3-4 pounds Boneless pork loin roast
  • 3 cups Sliced Leeks (about 3)and sweat down to j
  • 1 quart Chuncky Salsa (brand of your choice)
  • 1 quart Chunky or Garden Pasta Sauce
  • 3 tablespoons oil
  • 1 teaspoon each salt and pepper (to taste)
Directions
  1. Heat oil in stew pot or Dutch oven and then sear the pork roast on all side including the ends.
  2. Remove roast and add leaks and cook till opaque.
  3. Once the leeks are cooked, return pork loin to the pot and place on top of leeks (you can also remove half the leeks, place the roast on top of the remaining leeks and then cover the roast with the other half)
  4. Now add the salsa and pasta sauce. Cover and simmer for between 1 hour fifteen minutes and 1 hour 30 minutes. Salt and pepper to taste before serving over rice.

This was an easy recipe, and a nice dinner. I had a 1 lb. pork loin, so I scaled down the other ingredients, and cooked for 45 minutes. I would recommend this recipe to anyone, and I would even consider this preparation for thick, bone-in pork chops.
