Gluten free Chocolate Chip Banana Muffins

These muffins are easily made in one bowl, and are free from gluten, grains, dairy, soy, nuts, and refined sugar! —Alexa Federico

  • Prep time 10 minutes
  • Cook time 25 minutes
  • Makes 12 muffins
  • 2 ripe bananas
  • 3 eggs
  • 1 cup coconut flour
  • 1.5 cups tapioca flour
  • 1 cup maple syrup
  • 1/4 cup coconut milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
In This Recipe
  1. Preheat oven to 350°F and line a 12-muffin tin with unbleached parchment liners.
  2. In a large bowl, mash the bananas until no visible chunks are left.
  3. Add in each ingredient stirring after each addition.
  4. Fill each muffin liner. There will be enough batter to fill each to the top.
  5. Bake for 25 minutes.
