This delicious cake is incredibly moist and flavorful . The crisp sliced apples , sweet pecans, and buttery batter marry well with the cinnamon laced applesauce and unexpected cream cheese frosting . Although simple to prepare the richness of its flavor is delightful . Just slice into generous squares and let your tastebuds enjoy every bite. —Karen

What You'll Need
Ingredients
  • Cake Batter
  • 5 Large Honeycrisp Apples
  • 1 cup Cinnamon Sweetened Applesauce
  • 3 Organic Cage Free Large Eggs
  • 2 1/2 cups White Granulated Sugar
  • 8 ounces Salted Softened Butter
  • 2 cups All Purpose Flour
  • 2 teaspoons Cinnamon
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Chopped Pecans
  • Cream Cheese Icing
  • 4 ounces Salted softened butter
  • 4 ounces Softened Cream Cheese
  • 2 cups Powdered Sugar
  • 1 teaspoon Pure Vanilla Extract
Directions
  1. Cake Batter
  2. Whisk together eggs , butter , applesauce , vanilla extract and sugar .
  3. Stir together flour, cinnamon, salt , baking soda . Add to egg mixture. Whisk together .
  4. Spread chopped pecans in bottom of prepared 13 x 9 x 2 inch pan . Sprinkle apples with more cinnamon , stir and layer thin sliced apples over the pecans . Pour batter evenly over pecans and apple slices.
  5. Bake in 350• oven on middle rack for one hour . Check for doneness after 50 minutes with toothpick inserted in center of cake. If there is wet batter on the toothpick continue to bake the cake for another 10 minutes. Remove from oven and cool in pan .
  6. Spread with Cream Cheese Icing when cake is cool . Sprinkle with cinnamon . Slice and enjoy . Refrigerate left-overs .

  2. In large bowl , beat together the butter , vanilla extract and cream cheese with an electric mixer. With the mixer on low speed , add the powdered sugar a little at a time and beat until smooth and creamy. Spread on cooled cake .

Made this for my mom's birthday, was a big hit from everyone! My grandson, who's 15, "oh my gosh this is so good." They requested it for Thanksgiving!
