Pressure Cooker French Toast Casserole

What You'll Need
Ingredients
  • Casserole
  • 8 ounces Challah loaf, cubed
  • 4 eggs, beaten
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg, freshly grated
  • pinch salt
  • 1 cup cream
  • 1/2 cup milk
  • 1/3 cup golden syrup or sugar
  • Topping
  • 1/2 cup chopped walnuts or pecans
  • 2 tablespoons butter, softened
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg, freshly grated
Directions
  1. Prepare a 6-quart electric pressure cooker by adding 1 cup water to inner pot and add trivet to bottom.
  2. Using a 3-quart electric pressure cooker inner pot or a deep sided 7-inch cake pan (or other pan that fits inside 6-quart inner pot), beat together eggs, vanilla and spices with fork.
  3. Add cream, milk and syrup/sugar and beat to combine.
  4. Add bread cubes and stir to coat and saturate.
  5. Set pressure cooker to manual or pressure cook on high for 20 minutes.
  6. When time is up, do a quick release and remove casserole.
  7. Topping: Combine all ingredients and cut together with fork.
  8. Distribute evenly over top of casserole and place under broiler for about 4-5 minutes. Don't walk away. Watch closely!! Nuts and sugar will burn quickly. Remove immediately from heat when browned.
  9. Cool slightly and serve.
