Ingredients

2 tablespoons
olive oil

1 1/2 tablespoons
lemon juice

1 tablespoon
dried oregano

2 teaspoons
dried mint

1 tablespoon
dried parsley

1 1/3 pounds
boneless, skinless chicken breasts(4) trimmed of fat
Directions

Whisk together the oil, lemon juice, oregano, mint, parsley, and garlic in a non reactive bowl or in zip-top bag. Add the chicken breasts and marinate for at least 30 minutes, and only up to an hour!

Preheat the oven to 450 degrees F. Remove the chicken from marinade and place on baking pan lined with foil or parchment paper.Bake for 25 minutes. Chicken will no longer be pink in the center and an instant read thermometer inserted into the thickest will read 165 degrees F. Remove pan from oven and let chicken sit for 5 minutes before cutting and serving.
