I was searching for a family-friendly "clean" dinner, and sloppy joe's seemed to be the fix. BUT, to my dismay, every single recipe included sugar as an ingredient. So, I fixed that. And my kids LOVE it! (So does my trainer!!) If sugar is not a concern, then go ahead and use ketchup instead of tomato paste. Especially if you have one and not the other. —Mara
Ingredients

2 pounds
organic ground beef (or bison)

2/3 cup
diced sweet onions

2/3 cup
diced sweet peppers

2/3 cup
shredded carrots

2/3 cup
shredded sweet potato (I use Japanese sweet potatoes)

12 ounces
tomato paste

1/3 cup
balsamic vinegar
-
1/3 cup
coconut aminos
-
2 tablespoons
mustard

Pinch
salt to taste
Directions

Begin by browning onions and peppers over medium high in a large skillet (use olive oil, coconut oil or ghee to help brown).

Add ground beef and brown, breaking meat into pieces.

Add carrots & sweet potato. Mix well & turn heat down to medium.

Add tomato paste, vinegar, aminos, mustard & salt. Combine well. (feel free to add more salt, vinegar &/or aminos to taste)

Turn to simmer with a lid on for 10-15 minutes until carrots and potatoes are cooked and the mixture has thickened.
