Turkey Mini Meatloaf

Mini-meatloaves for quicker cooking than a traditional whole meatloaf. And, everyone gets their own! —Amy

What You'll Need
Ingredients
  • 2 pounds ground dark meat turkey or chicken
  • 1/2 onion, grated
  • 2 stalks celery, finely chopped
  • 1 med carrot, grated
  • 1 teaspoon Emeril's Essence
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1 teaspoon paprika
  • 2 tablespoons ketchup
Directions
  1. Preheat oven to 450°F.
  2. In a large bowl, combine ground turkey with all remaining ingredients except ketchup, using hands to fully distribute spices throughout mixture.
  3. Form into 1/4-pound oval mounds and place on a parchment-lined, rimmed baking sheet.
  4. Bake in preheated oven for 20 minutes or until thermometer reads 165°F.
  5. Remove from oven and brush ketchup over tops of loaves. Return to oven and broil briefly until ketchup bubbles and sets.
