Whipped Tahini Sandwich Cookie Filling

A nutty but sophisticated filling for chocolate sandwich cookies. Also excellent with sugar cookies or coconut cookies. —Posie (Harwood) Brien

What You'll Need
Ingredients
  • 1/2 cup unsalted butter, softened
  • 1/4 cup tahini
  • 1 1/2 cups confectioners' sugar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream
Directions
  1. Cream the butter until pale and fluffy in a stand mixer, about 3 minutes. Add the remaining ingredients and beat until very fluffy, about 5 minutes. For an even fluffier texture, add an additional tablespoon of cream.

This is such a good recipe! I used it as a filling for alfajores and it was super delicious - I love the hint of nuttiness that comes through the buttery sweet.
