I developed this recipe as a vegan treat for my sister for Thanksgiving, but it quickly morphed into a family favorite. It's easy to whip together and can be vegan or non-vegan according to preference. It has a subtle crunch and tastes great with an oat streusel. If icing is your thing, a simple confectioner sugar glaze drizzled on top looks quite nice. —Sabrina Sucato
1 1/8 cups
eggs (or 2 egg replacers)
milk (or almond/non-dairy milk)

Soak dates for 15 minutes.
Preheat oven to 350 F. Grease loaf pan.
In a large bowl, mix flour, sugar, cinnamon, chia, flax, baking soda, and salt. Chop up dates finely and add them to the mix.
Add eggs, then add milk and oil. Mix until just combined.
Mix together streusel ingredients. The mixture should be dry and crumbly.
Pour batter into loaf pan and sprinkle streusel on top. Bake for 42-45 minutes or until golden brown and toothpick inserted into center comes out clean. Let cool before glazing, or eat as is. Enjoy!
