Antioxidant Packed Overnight Oats

This breakfast is perfect for those looking to amp up their breakfast! It is packed with antioxidants, low glycemic grains, and vegetables. Plus, you make it the night before and don't have to think about breakfast the next day!

  • 1/2 cup Gluten Free Oats
  • 1/2 cup Cauliflower Rice
  • 1/2 cup Plain Kefir
  • 1-2 tablespoons Milk (Optional)
  • 1-2 tablespoons Cacao Powder
  • 1/4 teaspoon Cinnamon
  • Salt

  1. Place the cauliflower into a small bowl with a little water to steam in the microwave (do 10-second intervals until softened).
  2. In a jar or leftover nut butter jar, place the oats and cauliflower into the jar and mix.
  3. Pour in the kefir, cinnamon, and salt and mix until combined.
  4. Pour some milk in if it won’t mix properly.
  5. Store in the fridge overnight or for a minimum of 4-hours.
