This is a hybrid of a bunch of online recipes, plus my experience with the diabetic unfriendly Monster Cookies that I make for my family for Christmas. —Brian Coppola

Ingredients

stick butter (softened)

1 cup
Swerve brown sugar substitute

eggs, beaten

1 cup
cashew butter (with oil)

1 tablespoon
vanilla

2 cups
peanut flour

1 cup
rolled oats

2 teaspoons
baking powder

1 cup
sugar-free chocolate chips or chopped 100% chocolate bar

1/2 cup
chopped pecans

1/2 cup
chopped walnuts
Directions

Blend Swerve with the softened butter, then add in the eggs, the cashew better, and the vanilla.

Add and blend in the baking powder, then the peanut flour and oats.

Add and blend in the chocolate chips and nuts.

Scoop in ¼ cup portions onto a parchment lined tray, and lightly press with a fork.

Bake for 10 minutes at 375F. Cool on a rack.
