Found this recipe many years ago and it has become a family tradition. We have always made Irish Soda Bread for St. Patric's Day but now can make cookies that taste the same as the Soda Bread and is easier to share among a large croud. I recently brought them to work and everyone couldn't stop talking about them. —mjg1313

Ingredients

2 cups
all-purpose flour

1/2 teaspoon
baking soda

1/4 teaspoon
salt

1/2 piece
(1 stick) butter (unsalted), softened

1/2 cup
sugar

1
egg
-
1/2 cup
raisins

1/3 cup
buttermilk
Directions

Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper.

Combine flour, baking soda, and salt in medium bowl.

Beat butter and sugar in large bowl with electric mixer on medium speed until fluffy. Add egg: beat 1 minute until combined. Add flour mixture; beat on low speed until combined. Add raisens; mix well. Add buttermilk; mix until combined.

Drop tablespoonfuls of dough 1 inch apart on prepared cookie sheets. Bake 12 to 15 minutes or until light brown.

Remove to wire racks; serve warm.
