Easy Spanish Chicken Breast for 1-or more

  • 1 piece Thawed Chicken Breast
  • 1 teaspoon chilli powder
  • 1 pinch Salt
  • 1 dash Garlic Powder

  1. Place 1 thawed chicken breast in a pie pan...line with aluminum foil for easier clean up.
  2. Sprinkle with salt and Garlic powder or granulated Garlic to taste. Sprinkle with Chili Powder to taste.
  3. Prepare your favorite Pico De Gallo ahead of time. Mine is just a fist full of white onion-Cilantro-seeded Roma tomatoes and one Jalapeño pepper seeded.Pop into a food processor and pulse gently...lol
  4. Pat dry your chicken breast and then dust it with the spices and salt. Throw it in the oven at 375 for about 25 min. Pull it out and cover with your Pico De Gallo. I prefer to top mine with the Pico De Gallo before I put it in the oven. Adjust your spices for yourself. Make more and serve with Spanish rice for a crowd....but so easy.
