Nước léo (Vietnamese Peanut Sauce)

This is the classic Vietnamese peanut sauce, great for dipping. —Ed

What You'll Need
Ingredients
  • 1 tablespoon peanut oil
  • 3 garlic cloves, minced
  • 1 teaspoon chile paste
  • 2 tablespoons tomato paste
  • 1/2 cup chicken stock
  • 1 tablespoon sugar (palm or coconut sugar preferred)
  • 1/4 cup hoisin sauce
  • 1 Thai red chile, thinly sliced
  • 1/4 cup roasted peanuts, ground
  • 2 tablespoons peanut butter, or less
Directions
  1. Fry the garlic, chile paste, and tomato paste in the peanut oil until aromatic.
  2. Add the chicken stock and sugar and stir until sugar is dissolved.
  3. Add the hoisin, thai red chile, and peanuts. Stir well.
  4. Slowly whisk in the peanut butter to desired consistency.
