A super fast and delicious one pot wonder! Tender chicken breasts cooked in a mixture of broth, heavy cream, sundried tomatoes, and garlic. Serve with pasta or mashed potatoes for a complete meal. —Dash of Amy

Ingredients
  • 4 chicken breasts, cut in bigger pieces
  • 2 cups organic chicken broth
  • 1/2 cup organic heavy cream
  • 3 tablespoons butter
  • 1/4 cup Parmesan cheese
  • 1/3 cup sundried tomatoes, julienne cut packed in oil
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon oregano
  • 2 garlic cloves, minced
  • 10 basil leaves, finely chopped
Directions
  1. Combine all ingredients except fresh basil in a medium stock pot and mix well.
  2. Bring to a slow boil over medium low heat, stirring often.
  3. Once boiling, reduce heat to low, and cook for about 6-7 minutes until the chicken is cooked through.
  4. Sprinkle with fresh basil, mix well. The chicken shreds easily when it's done.
