cilantro chorizo

Serves: 4-6

Ingredients

  • 2.5 pounds pork shoulder
  • 2 pounds chicken thigh
  • 0.25 pounds lard
  • 2 tablespoons sea salt
  • 1 cup peppers, roasted and chopped
  • 1 cup fresh cilantro, chopped
  • 1 piece hot pepper. chopped
  • 6 pieces garlic cloves, chopped
  • 1/2 cup dry kelp
  • 1 teaspoon each cumin, coriander, mexican oregano
  • 1 tablespoon dry carrot powder
  • 1/4 cup lime juice
  • 1/2 cup corn grits

Directions

  1. coarse grind all meat ingredients to mix
  2. chill meat overnite
  3. blend all remaining ingredients
  4. repeat grind to mix all ingredients
  5. break into 1/4 pound increments
  6. vacuum pack and freeze
