pork shoulder

chicken thigh

lard

tablespoons
sea salt

cup
peppers, roasted and chopped
1
cup
fresh cilantro, chopped
1
piece
hot pepper. chopped
6
pieces
garlic cloves, chopped
1
/
2
cup
dry kelp
1
teaspoon
each cumin, coriander, mexican oregano
1
tablespoon
dry carrot powder
1
/
4
cup
lime juice
1
/
2
cup
corn grits
Directions
coarse grind all meat ingredients to mix
chill meat overnite
blend all remaining ingredients
repeat grind to mix all ingredients
break into 1/4 pound increments
vacuum pack and freeze
