The only thing better than bacon and eggs is smoked salmon and eggs! It's fantastic as is, on a toasted baguette, or spread over hearty crackers. The subtle smokiness of the smoked salmon brings this simple egg salad to the next level. —Anne Biedenstein
Ingredients

1/2 cup
mayonnaise

2 tablespoons
Dijon Mustard

2 teaspoons
white wine vinegar

scallions, slices

1/4 cup
fresh dill, chopped

hard boiled eggs, chopped

8 ounces
smoked salmon, chopped (Honey smoked is my favorite)

Salt and pepper to taste

Baguette slices, crackers, lettuce leaves, or whatever you wish to serve it on
Directions

Whisk together the mayonnaise, mustard, vinegar, dill, and scallions in a large bowl. Add eggs and smoked salmon, folding gently to combine.

Mound on top of your serving vessel of choice, garnishing with additional dill fronds or a light dusting of paprika.
