Smoked Salmon Egg Salad

The only thing better than bacon and eggs is smoked salmon and eggs! It's fantastic as is, on a toasted baguette, or spread over hearty crackers. The subtle smokiness of the smoked salmon brings this simple egg salad to the next level. —Anne Biedenstein

  • Prep time 30 minutes
  • Serves 6-8
Ingredients
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon Mustard
  • 2 teaspoons white wine vinegar
  • 3 scallions, slices
  • 1/4 cup fresh dill, chopped
  • 12 hard boiled eggs, chopped
  • 8 ounces smoked salmon, chopped (Honey smoked is my favorite)
  • Salt and pepper to taste
  • Baguette slices, crackers, lettuce leaves, or whatever you wish to serve it on

Directions
  1. Whisk together the mayonnaise, mustard, vinegar, dill, and scallions in a large bowl. Add eggs and smoked salmon, folding gently to combine.
  2. Mound on top of your serving vessel of choice, garnishing with additional dill fronds or a light dusting of paprika.
