Author Notes

I have adapted this from the original recipe making the following changes/additions:
In place of linguine, I used angel hair; in place of cherry tomatoes, I used one 16 oz. can of diced tomatoes, undrained; I used 1/4 tsp. of red pepper flakes instead of 1/2 tsp.; and I added a one lb. boneless, skinless chicken breast, chopped in small pieces and 8 large fresh mushrooms, sliced. —Phyllis Morton

Ingredients
  • 12 oz. angel hair pasta
  • 16 oz. can diced tomatoes
  • 1 chicken breast, cubed
  • 8 large fresh mushrooms, sliced
  • 1 onion, thin sliced
  • 4 cloves garlic, thin sliced
  • 1/4 teaspoon red pepper flakes
  • 2 sprigs basil, plus leaves for garnish
  • 2 tablespoons xtra virgin olive oil
  • salt and pepper to taste
  • 4 1/2 cups water
Directions
  1. Combine all ingredients in large pan with pasta lying flat.
  2. Bring to a boil and cook, stirring frequently about 9 minutes, or until pasta and chicken are cooked.
  3. Garnish with basil leaves and Parmesan cheese
