This pasta cooks easily in one pan (no need to boil the water first) and makes its own creamy sauce, in about 10-12 minutes. Great as a main dish or as a side with Chicken, Shrimp or Fish. Adapted slightly from Martha Stewart's One-Pan Pasta. —Mrs. C

Roma Tomatoes, Diced into bite-size pieces

Onion, thinly sliced (about 2 cups)

Cloves Garlic, thinly sliced

1/2 teaspoon
Red Pepper Flakes

2 sprigs
Basil, plus extra for garnish

2 tablespoons
Extra-Virgin Olive Oil

2 teaspoons
Kosher Salt

1/4 teaspoon
Freshly Group Black Pepper

4 1/2 cups
Water

Freshly Grated Parmesan Cheese, for serving
Directions

In a large skillet, add linguine (should lay flat), tomatoes, onion, garlic, red pepper flakes, basil, olive oil, salt, pepper, and water.

Bring to a boil over high heat, stirring and turning pasta frequently with tongs or a fork, until pasta is al dente and water has almost evaporated, about 9-10 minutes.

Season to taste with additional salt and pepper, if needed, and divide among 4 bowls. Garnish with basil and freshly grated parmesan cheese.
