Author Notes

Fried Meatballs from mince meat of beef, is one of best and most delicious recipes of Greek cooking and also Turkish cooking, for all seasons.
INGREDIENTS:
-Half/one kg of mince meat (of beef)
-One onion
-One fresh tomato
-Ouzo (traditional Greek drink, our national drink, which you can find at airports and in Greece in Super Market; you may be able to find it also in other countries in Supermarkets in some cases, however it can be optional..)
-Five tablespoon olive oil
-Oreganon
-Very little cumin
-Salt, pepper
-One slice wet bread
PREPARATION
We put the mince meat in the deep bowl, or plate, and then we add the wet bread, blended tomato, (hence tomato juice), five tablespoon olive oil, onion blended and become a mass, oreganon, some cumin, salt and pepper
We work with hand all this, till all ingredients are absorbed by mince meat. We can taste and for ex. we add some more salt etc
Then we make small rounded balls from it, by arranging size, and then we put each ball on a plate with flour, and roll balls in it, so that they won't ''stick'' upon being fried.-In the meantime, we have put a deep pan (skillet) on stove with burning oil, and we fry each ball separately, of course we put many balls at the same time, and we wait till they are fried. Then we remove share and put another share, for ex. 7 balls each time. Then, when balls each time are well fried, we put them on a plate where we've put one-two paper serviettes, to absorb oil, so that they are not ''heavy'' in taste this way, with bit lower calories.
-We can serve with Greek fresh salad, and/or fried potatoes, and if it's summer we can also drink cold beer together. —Aikaterini Katapodi
