Oven Roasted sardines.

Ingredients
  • 12 Medium fresh sardine fillets
  • 4 tablespoons Olive oil
  • half teaspoon Sea salt
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1 Garlic clove
  • 1 teaspoon English mustard
  • Some parsley to serve

Directions
  1. Put all the ingredients except the sardines and parsley in a blender and wiz until you have a rough paste.
  2. Wash and dry the sardines and place them (skin down) carefully on a flat dish. Cover all over with the paste, and them cling film. Marinade for a few hours.
  3. Cook with the marinade in a preheated oven at 210 degrees Celsius, for 12 minutes.
  4. Serve if you wish with more olive oil on top and sprinkle some fresh parsley.
