Medium fresh sardine fillets

Olive oil

Sea salt

Lemon juice

Some parsley to serve
Directions

Put all the ingredients except the sardines and parsley in a blender and wiz until you have a rough paste.

Wash and dry the sardines and place them (skin down) carefully on a flat dish. Cover all over with the paste, and them cling film.
Marinade for a few hours.

Cook with the marinade in a preheated oven at 210 degrees Celsius, for 12 minutes.

Serve if you wish with more olive oil on top and sprinkle some fresh parsley.
