ripe plantains, peeled and sliced at an angle

1/2 cup
coconut or sunflower oil
Directions

On medium heat, place plantains in oil and fry on both sides for 1-2 minutes until golden brown. Reduce heat and cook for 6-8 minutes until the plantains are soft. Drain on paper towel and serve hot.
