Baked Bean and Cheese Burritos

One of the easiest dinners you can make - making these bean and cheese burritos perfect for a weeknight meal. The kiddos and adults love them equally. —Leslie

  • Prep time 10 minutes
  • Cook time 15 minutes
  • Makes 6 burritos
Ingredients
  • 6 tortillas
  • 16 ounces refried beans
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded rotisserie chicken, optional

Directions
  1. Preheat oven to 420 degrees.
  2. Line a baking sheet with foil. Spray baking sheet with non stick spray.
  3. Place a tortilla on a plate. Scoop ¼ cup refried beans in closer towards one end of the tortilla. Add 4 pieces of chopped chicken - if using. Top with a handful of cheese - about ⅓ cup.
  4. Fold up like a burrito. Place seam side down. Spray the top with non-stick spray.
  5. Place in oven. Bake for about 7 minutes or until the bottom is crispy. Flip and continue baking for about 7 minutes or until crispy.
