Super Green Guacamole made with avocados, tomatillo, scallions, cilantro, serrano peppers, garlic, lime juice, oil, salt and pepper. —myvegetarianroots

Extra Virgin Olive Oil

1 teaspoon

Directions

Take the skin off of tomatillo. Add skinned tomatillo, scallions, cilantro, serrano pepper, garlic, extra virgin olive oil, salt and black pepper to a food processor or a chopper.

Process these ingredients until they are finely chopped in the processor by doing few pulses at a time and checking the consistency. Do not make a paste out of it.

Add 2 avocados to the chopped ingredients and pulse the processor for few more times until you find good guac consistency, do not form a paste.

Taste the guac and see if it needs any lime juice or salt, if so add and pulse it for couple of time.

Serve it with chips, tacos, eggs or as a side with any Mexican food!
