Herby Potato Salad

What You'll Need
Ingredients
  • 6 potatoes
  • extra virgin olive oil
  • 3 tablespoons mild mustard
  • Handful fresh parsley
  • Handful fresh mint
  • Handful fresh basil
  • Teaspoon salt
  • 3/4 teaspoon black pepper
Directions
  1. Preheat your oven to 200°C Fan/220°C
  2. Chop the potatoes into sixths/large chunks
  3. Put them on a baking tray with a big sprinkle of salt, pepper & about 1/4 cup olive oil
  4. Mix with your hands until well coated, then bake in the oven for about 30 mins at 200C Fan/220C
  5. Roast until nice and golden
  6. Chop up the herbs until fine
  7. Add the roasted potatoes (and the rest of the oil it was cooked in) to a big bowl, then add the herbs, salt and pepper to taste, the mustard and another 1/4-1/3 cup olive oil if you feel it need loosening
  8. Give the whole thing a good toss, adjusting salt and pepper to taste, then serve warm or chilled

Delicious! Made it for an outdoor baby shower! Very light with just the right herbs and flavor!
