Didn't know what to have for breakfast this morning, so I grabbed some zucchini scraps that I had left over from zoodles Ihad made the day before, some bacon, eggs and some tangy blue cheese. Wildly delicious in few minutes. —jackie de sordi
butter or ghee
slices bacon cut up in 1 inch strips
grossly chopped zucchini
crumbled blue cheese
In This Recipe
Using preferably a non-stick pan, melt your butter or ghee adding the bacon and zucchini, cooking at medium/ high heat till bacon and zucchini are almost done.
Throw in your eggs that you have already whisked while your pan is sizzling.
Let them cook until almost done in the mode of an omelette and add that tangy blue cheese over. Fold and serve.
