Mango Salsa or Cole Slaw? Both. Together!
I was trying to decide what to make for dinner while driving to the market and decided to combine two of my favorites together - and it's a party in a bowl!

OK to change ratio of vegetables based on what you have - red cabbage or green, red bell pepper or green, cherry tomato or plum, red onion or green. The key is to allow the lime juice to blend the flavors of the peppers, salt and onion while you prepare the rest of the salad. —Dearinger

Ingredients
  • 1 teaspoon jalapeno pepper diced
  • 1/2 teaspoon salt
  • 1/3 cup fresh squeezed lime juice
  • 1/2 cup diced red bell pepper
  • 1/3 cup thinly sliced red onion
  • 1/2 small cabbage sliced thinly - red or green
  • 1 diced avocado
  • 1/2 cup cherry tomato halved
  • 1/2 bunch chopped cilantro
  • 1/2 ripe mango cubed
  • 2-3 tablespoons avocado oil
Directions
  1. Put the jalapeno, red onion, bell pepper in the bottom of nice salad bowl. Sprinkle it with salt and pour the lime juice on top and mix. This will allow the flavor to mix in the lime juice while assembling the rest of the salad. Slice cabbage and add other ingredients to the bowl. Top with Avocado oil. Toss just before serving. Serve cold with cilantro rice, carnitas, barbeque or smoked meat or poultry.
