Pear Compote with Vanilla & Cardamon

Compote is a French classic and traditionally made of apples! Try this pear compote variant, delicately scented with vanilla and cardamon.

I am such a big lover of pears with their juicy flesh and beautiful aromas. I am always on the search for some novel recipes to use them in. The crystallised ginger is a little naughty and optional, but will add an amazing texture and pairs beautiful with those pears!!!! —Virginie Bonvalet

What You'll Need
Ingredients
  • 4 Red William pears
  • 1 tablespoon Maple syrup
  • 1 Lemon
  • 4 Cardamon pods
  • 1 Vanilla Pod
  • 1 tablespoon Crystalised ginger chopped in little pieces
  • 1 tablespoon Chopped hazelnut
Directions
  1. Peel & core the pears and cut in small pieces. Cook in a pan for 5 – 10 minutes until the pears become soft.
  2. Cut the vanilla stick in half and scrape all the seed and add to the pear, as well as the lemon. Slightly crush the pods and also add to the pears. Leave to cook for another 5 minutes and add the maple syrup.
  3. Discard the vanilla and cardamon pods, finally mix in a blender. Serve warm with the crystalised ginger and hazelnut on the top.
