This pumpkin bread is the easiest thing to make when you have a midnight craving in the fall! Its so fluffy & soft while the outside has a craggily exterior that gets slightly crunchy when toasted. Its a perfect fall treat for day or night! Top it with chocolate and almond butter for a special pick me up! —Three Hungry Bellies
Ingredients

all purpose flour

almond flour

1 tablespoon
baking soda

oat milk

oil

15 ounces
can of pumpkin

1 tablespoon
pumpkin pie spice

1 teaspoon
cinnamon

chocolate & almond butter (optional)
Directions

Preheat the oven to 350 degrees Fahrenheit.

Throw everything into a large bowl and mix it until you get a nice combined batter.

Pour batter into a parchment lined bread pan and bake for 45 - 50 minutes or until the you touch the center and it pushes back or if you want them done quicker, use a muffin pan, spray them with coconut oil, and bake for 15 -18 minutes.

** Vegan version: Instead of using an egg, use 1 tablespoon of ground flax seeds and mix everything together as normal.
