Shankarpali or shakkarpara is a snack popular in India.It is traditionally enjoyed as a treat on Diwali. It is rich in carbohydrates, making it an instant source of energy. Shakkarpara is a sweet and crispy, deep-fried, diamond-shaped, Indian cookie. —hindustanisakhisaheli
Ingredients

3 cups Maida flour

1/2 teaspoon Salt

Oil for deep frying

1/2 cup ghee/Oil

1 cup Sugar

1 cup hot water
Directions

Making the dough:
1)Heat the water just till it becomes warm. I have warmed it in microwave for 1 minute. You can do it on stove top too.
2)Now add sugar ,stir very well till sugar dissolves.
3)Next add ghee and salt to it and mix them altogether.
4)Take maida flour and put it in the mixing bowl.Slowly add liquid mixture and start kneading.
5)No need to rest the dough.

Making shankkarpara recipe:
1)Divide the dough into small tennis ball shape portions.
2)And take one portion at a time and flatten it out into round disk.
3)Now roll it with rolling pin. You have to use more pressure than regular chapati rolling, because dough is really stiff. While you were rolling it start to break from edges.
4)Use your thumb and finger to seal it and roll again.
5)Keep sealing and rolling till you get 8-9 inch big circle or ¼ inch thick.
6)Cut into your desire shape diamonds or squares.
7)Heat the oil in a pan on medium-low heat. Once oil is hot add few at a time.
8)Keep moving at intervals for even browning.
9)Fry till they are golden brown from both sides.
10)then remove them to paper towel lined plate.
11)Fry rest of them
12)Let it cool completely and then store in airtight container.
