Ingredients
- Crust

row, plus 2 cookies, from a standard pack of Oreos

stick of butter, melted

1 1/2 teaspoons
instant coffee crystals
- Filling

carton of cookies and cream ice cream, softened

1 tablespoon
instant coffee crystals (or espresso, for stronger flavor)

1 pinch
powdered sugar

1 teaspoon
Rum or rum extract

To make the filling, smash the cookies in a ziplock freezer bag until they're crumbs. Combine with the butter and coffee in a bowl. Press into a pie plate and place it into the freezer while you mix the filling.

In a large bowl, combine the filling ingredients and stir them well to incorporate. Work quickly so the softened ice cream doesn't get too soft.

Pour the filling into the prepared crust and freeze for at least an hour and a half before serving.
