Our favorite perfectly fluffy pancakes. Every time we make them, we joke that with these pancakes every days is Sunday. —Egle

Ingredients
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • dash of salt
  • 2 eggs
  • 1 tablespoon melted butter
Directions
  1. Sift the flour, sugar, baking powder, and salt into a large bowl.
  2. In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
  3. Add the buttermilk mixture to the flour mixture and stir until just incorporated.
  4. Heat a frying pan or griddle over medium-high heat and lightly coat with butter or nonstick spray. Once the pan is very hot, ladle the batter into the heated pan and cook until the top bubbles and the bottom is browned.
  5. Flip and cook until the other side is nicely browned. Serve as you like them. We like ours with powdered sugar, homemade jam and some sprinkled cinnamon.

I made these pancakes OCT.,2013. The recipe said that it made 20-25 pancakes. It only make 6 small-medium pancakes. There is no way you can get 20-25 pancakes out of 1 cup flour to 1 cup buttermilk. Its funny that people that said they made the pancakes didn't notice this. Retested using 1/4 measuring cup and still got 6 pancakes.

Made these this morning and they turned out beautifully. Not sure what the negative comments are about, these were light & fluffy HEAVEN!

I saw this today posted on yahoo so I tried it exactly how it was posted. Unfortunately it was a big dissappoinment because it was so flat, egg-y & flavour's just okay...not that I expected! I've been making pancakes (& others!) for years & I always put baking soda on mine & just 1 egg. Not a good recipe to keep...not HEAVENLY too!

I agree with the one post in that the article states either baking soda is used or baking powder is used. I'm thinking the author meant baking powder but not positive

Thanks for the post - quick question. The ingredient list states to use baking powder, while the instructions in step one say baking soda. I'm wondering which it is - thanks!
